Make Merry at Home on Christmas Day

Tis the season to be jolly, Fa la la la la, la la la la. And we know just the way. These recipes are sure to send you into la-la land and your guests into ga-ga land on Christmas Day.

Merry Xmas, folks!


What you need: 4 cups milk, 5 cloves, 1/2 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 12 egg yolks, 1 1/2 cups sugar, 2 1/2 cups light rum, 4 cups light cream, 2 teaspoons vanilla extract, 1/2 tsp ground nutmeg

What to do: Combine milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan. Keep gas setting at lowest and slowly bring mixture to a boil.

Combine egg yolks and sugar, and whisk until fluffy. Whisk milk mixture into the eggs slowly, and pour it all into the saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Don’t let the mixture boil. Remove cloves, and let cool for about an hour.

Stir in rum, cream, the rest of the vanilla essence, and nutmeg. Refrigerate overnight before serving.

Serves: 12 people


What you need: 4-5 cups apple juice (fresh preferable), 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 3 ounces spiced rum, cinnamon sticks and apple slices to garnish.

What to do: Heat the apple juice, spices and rum in a sacucepan over low/medium heat. Stir often so the spices leach into the juice. Once it’s hot, pour into two mugs. Serve garnished with apple slices and cinnamon sticks.

Serves: 2 people


What you need: 2 bottles light-bodied red wine, 1 ¼ cups sugar, zest of 1 orange and 1 lemon, 3 peppercorns. 2cardamom pods, one 3-inch cinnamon stick, 2 cloves, ½   cup kirsch (optional)

What to do: Combine the red wine with the sugar and the orange and lemon zests in a saucepan. Crush the spices, put in a tea ball and add to the saucepan. Bring the wine to a very slow simmer and stir till sugar dissolves. Remove from heat, discard the tea ball and add the kirsch. Ladle into heatproof glasses and serve at once.

Serves: 4 people
